Ingredients

  1. Halfpackage of Thai rice noodles, prepared as box instructs
  2. 1 pounddiced chicken
  3. 2 TbsEVOO
  4. 1 bunchgreen onion, chopped
  5. 2 clovesgarlic, minced
  6. 1 cupmatchstick carrots
  7. 1 cupbroccoli slaw mix
  8. 2 Tbssesame oil
  9. 2 Tbsbrown sugar
  10. 2 Tbslime juice
  11. 3 Tbssoy sauce
  12. 1squirt sriracha
  13. 1/2 cupdry roasted peanuts
  14. 1/2 cupchopped cilantro

Cooking Instructions

    Cook noodles according to package directions, set aside

  2. 2

    Heat EVOO in large skillet, add diced chicken

  3. 3

    Cook chicken until almost done

  4. 4

    Add green onion and garlic, cook until soft

  5. 5

    Add carrot and broccoli slaw mix

  6. 6

    Mix oil, sugar, juice, sauce, and sriracha in small bowl

  7. 7

    Add sauce to pan once chicken is thoroughly cooked

  8. 8

    Add noodles

  9. 9

    Simmer a few minutes and mix thoroughly

  10. 10

    Remove from heat and garnish with cilantro and peanuts

  11. 11

    I like to add the broccoli slaw mix to get more veggies, making this an easy one-pot meal

Started cooking/baking with Gram just as soon as I was old enough to stand in a chair, with her apron tied around my chest. Made my first solo Thanksgiving meal at age 8. Putting a new flair on classic nothern New England style cooking.
