Back in my hometown, there was a underground shopping district that all young people loved. In a small cramped food court, there was an old lady who was famous for her stir-fried mashed potatoes; we would line up just to get a little bowl.

Ingredients

  1. 3potatoes
  2. 1green onion chopped
  3. Vegetable oil
  4. 1 tbspsoy sauce
  5. 1 tbspdark vinegar (Chinese vinegar)
  6. 1 tspsesame oil
  7. 1 tspwhite sesame
  8. 1/2 tspsalt
  9. 1/2 tspsugar
  10. 1 tspfine chili powder (optional)
  11. 1 1/2 tspcumin powder
  12. 1 1/2 tspgarlic powder

Cooking Instructions

    Boil the potatoes until you can stab a fork into it easily

  2. 2

    Mash the potatoes

  3. 3

    In a non-stick pan, add oil and turn to medium heat (note: if along the way, the mashed potato is starting to burn, feel free to add more oil)

  4. 4

    When the oil becomes runny, add potatoes and stir for 1 min

  5. 5

    Add soy sauce and dark vinegar, stir to combine

  6. 6

    Add salt, sugar, sesame, sesame oil, chili powder, cumin powder, garlic powder. Stir to combine evenly

  7. 7

    Add green onions, stir evenly.

  8. 8

    Done!
