Algerian Couscous
Delicious Algerian couscous.
Steps

Combine the meat with a little clarified butter, spices, onions, garlic, and grated tomatoes. Mix well and let the meat absorb the flavors.

Sauté the mixture in a pressure cooker. Once well browned, add water to the pot and let it cook. When the meat is tender, remove it and add the vegetables and hot pepper. Cook until the vegetables are done.

Bring a pot of water to a boil. Place the couscous in a large bowl, pour water over it, and let it absorb. Transfer the couscous to a steamer basket (couscoussier) and steam it over the boiling water.

Once steamed, remove the couscous and add water (use the same amount as the couscous). Let it absorb again, then mix in a little oil and salt. Steam it a second time. When done, add clarified butter and serve with the sauce. Enjoy!
