Whisked excel sponge cake

Cooking Instructions

Into a mixer bowl, measure Sugar, flavour, excel sponge and eggs. Using the balloon whisk of the mixer, whisk on high speed until mixture is well mixed, foamy and more than double in size.

Measure butter together and add to the mixture, continue whisking with the balloon whisk until well combined

Measure flour and sieve into a bowl, add baking powder and preservative to it, add the flour mixture into the mixture of eggs, Sugar, butter etc and allow it combine on low speed using the balloon whisk.

Measure required quantity of water, add Milk into it and using hand whisk mix together until Milk is well dissolved.

Add the milk mixture to the batter and continue whisking with the balloon whisk on low speed until well combined.

Rub a 6" pan with margarine, dust with flour and shake off any excess flour.

Pour the batter into already greased baking pan and bake in a moderately hot oven, medium gas mark or temperature, slightly hot for about 30-45mins or 1 hr, duration will depend on cake size.
