In a pan take a pan and heat the oil. Then add cloves, bay leaf, cinnamon sticks and cardamom after 1 min add the chopped onions. When the onions turn light brown, add ginger and garlic paste cook it for 1 minute. Then add cumin powder, coriander powder, turmeric powder and red chilies powder, with little water cook the masala properly.

Then after 2-3 mins add green chilies paste, salt and add some little water to cook the masala well. When the masala is cooked properly, add the washed chicken pieces. With closed lid cook it for 20 mins and stir occasionally.

On the side in boiling water add bamboo shoots pieces (if it is fresh) and then cook it for 5-8 minutes. Drain the water and keep them aside. In case you are using canned bamboo shoots then just wash them properly with warm water.

After 20 mins, when the chicken is cooked half way and the water has been reduced add the boiled bamboo shoots, give it a very good stir and cook them together for 5-6 minutes. Then add 1.5 cup of water to it and cook it until the chicken is fully cooked.

Heat oil in a pan, add chopped onion and garlic. Fry them until soft.Then add garlic paste, ginger paste, cumin paste, salt, red chili powder and turmeric powder.
