This spicy red mutton rezala can be enjoyed with polao, rice , roti , nan and even paratha. I had it for the first time 10 to 12 years and since then this has been a Friday special dish.

Take a pan and heat the oil. Once the oil has heated add the whole spices (cardamom, bay leaves, cinnamon and cloves) after 1 min add the chopped onions and fry them until light brown.

Then to this add garlic and ginger paste, fry it for 1 min then add chopped tomato, Kashmiri chilli powder, turmeric powder, coriander powder and cumin powder. To this add small amount of water to cook all the masala properly. After 2 mins add further little water and cook the masala with closed lid. When the masala is cooked well then add the washed mutton, salt and stir it well. Cook this for 30-40mins with closed lid and occasionally stir to prevent it from sticking to the pan.

Blend the yogurt, bereshta (fried onion), nutmeg, cashews and it a paste. After 30-40 mins add this paste along with briyani spice powder and green chilies. Stir it well and cook it further with 1 cup water in medium heat.

When the water reduces down add further half cup of water, sugar, lime juice and saffron infused milk. Cook it until the meat is tender.

In the final step add kewra water, cook it for 5 mins, then add ghee and cook it further for 2 mins. Serve the dish, garnish it with little bereshta (fried onion) and enjoy.
