Ingredients

  1. 6small sized purple brinjal / baingan / eggplant
  2. 3 tbspoil
  3. 1/2 tspmustard seeds / rai
  4. 1/4 tspmethi / fenugreek seeds
  5. few curry leaves
  6. 1onion finely chopped
  7. 1 cuptamarind water
  8. 1/2 tspjaggery / gud optional
  9. 2 tbspcoriander leaves finely chopped
  10. for onion-tomato paste:
  11. 2 tspoil
  12. 1onion thinly sliced
  13. 1 tspginger garlic paste / adrak lasun paste
  14. 1/2 tspturmeric powder / haldi
  15. 1tomato finely chopped
  16. 1 tspcoriander powder / daniya powder
  17. 1/4 tspcumin powder / jeera powder
  18. 1 tspkashmiri red chilli powder / lal mirch powder
  19. 1/2 tspgaram masala powder
  20. to tastesalt
  21. for stuffing:
  22. 2 tbspsesame seeds / til
  23. 1/2 cupcoconut fresh / desiccated / dry
  24. 1/4 cuppeanuts / groundnuts roasted & peeled
  25. 1 tspkashmiri red chilli powder / lal mirch powder
  26. to tastesalt

Steps

  1. 1

    Firstly, take the cut brinjal and stuff the prepared stuffing. and fry on medium flame with 3 tbsp of oil. cover and simmer for 2-4 minutes or till they are half cooked. further, take off and keep aside. now in the same kadai add mustard seeds, methi and curry leaves. allow to splutter. further add onions and saute well.

    Also add prepared onion-tomato paste and continue to saute. furthermore, place the stuffed and fried brinjals. and pour tamarind wate add a piece of jaggery. mix gently, cover and simmer for 5 minutes. stir occasionally and cook till the brinjal gets cooked completely. finally, serve baingan masala with chapathi or roti.
