A quick healthy breakfast for busy mornings.
Steps

Finely chop all the veggies.

In a kadhai add 1 tbsp of oil,once hot add the ingredients given in the tempering section. First add mustard seeds and wait for it to splatter to add the remaining ingredients.

Add onion and capsicum and fry till soft.

Add 4 cups of water and required salt. Wait for the water to boil.

Now add the vermicelli and give a stir.

Cook on medium flame till the vermicelli cooks up fully.

Enjoy the vermicelli upma with a fantastic coconut chutney.

Notes:1) I have used a big variety of vermicelli so added water in 1:2 ratio if you're using a small variety reduce it to 1:1 1/2.2)You can add any veggies of your choice to make it more healthier
