Pepperoni and Cheese Calzone

On Friday, I made sourdough pizzas and had some leftover dough. So, I saw Kikey's recipe and thought... it's been so long since I made a Calzone! So the next day, with what I had left, I prepared this big empanada (as my husband likes to call it) and it was a hit. We ate 2... well-fed, but I think it serves about 3. You can also make it with traditional pizza dough.

Roll out the dough into a circle on a lightly greased baking sheet. On one half, place the sauce, onion, cheese, sliced bell pepper, and pepperoni.

Fold in half, press the edge well, and crimp (if you can... if not, you can mark with a fork).

Bake in a moderately hot oven until lightly golden on top and bottom. Ready to enjoy!
