Ingredients

1 and a half hours
2 as a main or 4 as a side dish
  • 3-4left over cooked sausages
  • 1sweet potato, peeled and chopped into chunks
  • 1red onion, peeled and sliced
  • 1brown onion, peeled and sliced
  • 4 clovesgarlic
  • 6-8mushrooms, peeled and quartered
  • 1yellow pepper, de-seeded and chopped into chunks
  • 10plum or cherry tomatoes, halved
  • 2-3 tbspolive oil
  • rosemary - fresh or dried
  • 1/2 tspbrown sugar or honey
  • 1 tbspbalsamic vinegar
  • 200 gtinned chickpeas, drained
  • 50 gfeta, crumbled
  • Handfulgrated or fresh mozzarella (optional)

Steps

1 and a half hours
  1. 1

    Put all the chopped veg into a large ovenproof dish.

  2. 2

    Add the oil, vinegar, herbs and honey /sugar and coat the veg well.

  3. 3

    Add the chopped sausages and mix into the veg

  4. 4

    Cover the dish with foil and cook for an hour on 180°c

  5. 5

    Remove from the oven and stir well. Add your chickpeas and feta and stir again

  6. 6

    Return to the oven for 20 minutes without the foil.

  7. 7

    Serve in warm bowls with some crusty bread
