Cooking Instructions
- 1
A little warm water/ liquid of your choice. PS IT SHOULD BE WARM put the vanilla essence and yeast. Stir and place it aside for it to react for 10 mins
- 2
In a bowl put the flour, sugar, salt and mix the dry ingredients well
- 3
If you are using buttermilk / milk reduce the amount of margarine or salad oil you are to use. If using water 2 tablespoons of either margarine/ oil can be used
- 4
In the bowl with the flour add the margarine/oil and thoroughly mix until the mixture forms crumbs
- 5
Add the liquid mixture that has yeast into the flour mixture and knead it thoroughly for it to combine well.
- 6
Once dough is formed, smear a little oil on the dough and cover the bowl and place it in a warm place for it to rise
- 7
After 45 to 60 mins uncover the dough, it should have risen to double it size.
- 8
Re knead the dough and if using dessicated coconut add it at this stage
- 9
One can use a glass, cup or even doughnut cutter for the shape but the rolled out dough should be thick to the touch
- 10
Place the cut outs and place them aside so as to rise a bit more
- 11
In a shallow pan heat the oil in medium heat
- 12
Start frying the cut outs until golden brown. Once done cooking place them in a draining rack after which place them on an absorbent paper.
- 13
Serve when they cool. For breakfast serve with your beverage of choice or munch them on their own. Shelf life 3days
- 14
Enjoy

Fish Nanban Zuke (Japanese style Escabeche) Fish Nanban Zuke (Japanese style Escabeche)
This is a traditional dish popular in Japanese Izakaya (dining bar) , but often made at home as well. Vinegar, Soy sauce and onion soften fishy smell (I strongly insist fresh fish is not smelly at all though) , so good to introduce anybody who does not familiar with fish."Naban" is an old word for onion or green onion. Don't forget to use them! #eikoskitchen Eiko -

Buttermilk Grilled Chicken Buttermilk Grilled Chicken
From now on, I will grill my chicken ONLY after 8- 10 hours of marinating them in buttermilk! (Important: Don't marinate more than 12 hours in Buttermilk - the spices will start to leach out instead of in!)The spices / herbs that one adds to the buttermilk infuse the chicken during the marinating process and produce a juicy, delicious chicken that needs absolutely nothing more to enjoy (as in no need for any BBQ sauce!!)And: You can freeze the leftover marinade and re-use again.PS: If you prefer to fry instead of grill: Dredge the chicken in flour and fry them, in small batches, in oil / vegetable shortening heated to 325 F / 165 C (don't go above this temperature when frying chicken) PaulN -
