This Chicken and Gnocchi Soup has been in my family for decades and is so easy and it's filled with vegetables, chicken and cauliflower gnocchi, all in a creamy, flavorful soup, that's just down right delicious. Everyone loves a comforting soup and this is it. #heirloom

2 tbspbutter
2 tbspolive oil
1 cupdiced onion
1 cupdiced celery
1 1/2 cupshredded carrots
3garlic cloves (minced)
1 tspdried thyme
to taste Salt and pepper
1/4 cupflour
2 cupschicken broth
2-3 cupsalmond milk or half and half
2 cupscooked chicken shredded or cubed
1 lbGnocchi prepared, (I used cauliflower Gnocchi.)
2-3 cupsbaby spinach or chopped spinach

In a large pot... heat the butter and olive oil over medium heat. Add the onions, celery, carrots, garlic and thyme and cook until softened, 5-10 minutes. Season to taste with salt and pepper.

Stir in the flour and cook for a couple of minutes. Slowly whisk in the chicken broth, scraping up any browned bits on the bottom of the pan. Slowly whisk in the half and half. Stir in the chicken. Bring to a simmer and cook for 20 minutes.

Add in the prepared gnocchi and spinach. Cook until the spinach has wilted.
