Ingredients

6-8 hours
8-10 cups
  • 1whole roasted chicken carcass
  • 1Onion chopped into large pieces
  • 3-5 clovesGarlic cut into large pieces
  • 1 Cupcelery chopped
  • 1 Cupcarrots chopped
  • 1Large broccoli stalk (optional)
  • 1Bay Leaf
  • Salt to taste (optional)

Steps

6-8 hours
  1. 1

    Bring water to a boil in a large stock pot

  2. 2

    Add chicken carcass, vegetables and seasoning and reduce heat to a simmer.

  3. 3

    Cover pot and simmer on low for 6-8 hours.

  4. 4

    Turn off heat, strain and store in air tight containers 3-5 days in the refidgerator. 6 months in the freezer
