If using frozen spinach, thaw and drain it very well. If using fresh spinach, clean and wash it thoroughly before adding it to the filling.

In a large skillet over low heat, sauté the green onions and leeks (chopped) in a little olive oil until they soften and become glossy. Add the spinach and cook for 2-3 minutes, stirring, until any excess liquid evaporates. Remove from heat.

Grease a baking pan or line it with parchment paper. Place one sheet of phyllo dough in the pan and brush it with olive oil.

Add the cheese, salt, and pepper to the spinach mixture. Mix everything well, then spread the filling evenly over the phyllo in the pan.

Cover the filling with the second sheet of phyllo dough and brush the top with olive oil. Lightly score the top to make it easier to cut after baking and to help it bake evenly.

Bake at 350°F (180°C) with both top and bottom heat and fan, for at least 40–45 minutes, depending on your oven's strength. Check to make sure the bottom is baked before finishing. Good luck!
