Birria inspired by a blend of my mom's and mother-in-law's recipes.

Cook the beef with one clove of garlic.

Cook the tomatoes, arbol chiles, and ancho chile.

Once the beef is cooked, chop it on a cutting board.

Blend the chiles, garlic clove, bay leaf, a pinch of oregano, salt to taste, and a splash of the beef cooking broth until smooth.

Pour the blended mixture into a pot with the chopped beef and simmer over low heat.

Serve and garnish with chopped onion, cilantro, and lime to taste.
