Rice Idli With Sambar are almost inseparable members on a traditional South Indian platter. Idlies are steamed cakes made of fermented rice-and-lentil batter. The first menu item in any South Indian restaurant is invariably idli. Sambar is basically spiced lentil soup. The main ingredient in Sambar is tamarind concentrate. The tanginess of tamarind cuts through soft and bland idlies, making the whole idli-sambar combination a big hit in Indian cuisine.

The first menu item in any South Indian restaurant is invariably idli. Sambar is basically spiced lentil soup. The main ingredient in Sambar is tamarind concentrate. The tanginess of tamarind cuts through soft and bland idlies, making the whole idli-sambar combination a big hit in Indian cuisine.

First add Idli flour in a large bowl, add sour curd, salt and water as required and mix well. Now place this mixer in a warm place to ferment for 7 to 8 hours.

Now the ferment has come. Then with spoon the idli batter again mix for 2 to 3 minutes. Now to make the idli fluffy, pour the required amount of idli batter in another bowl, add baking soda and mix well. So that the batter will be quite fluffy.

Then pour water in the idli making pan and heat it on gas. Grease the idli stand with ghee or oil till the water boils. Now add the prepared idli mixture to the greased stand. Then sprinkle Kashmiri red chilli powder on top.

Place the idli stand in the idli making pan and let it rise for 15 to 20 minutes. Once the idli rises, remove the stand from the lid and let it cool down. When the idli cools down a bit, remove it from the idli stand and serve hot.

Now we will make a sambar. First of all, wash and clean the lentils and soak them in water for 1/2 hour. Now add this lentils to a cooker. Add turmeric with 3 cups of water. Then in a steel bowl add the carrot pieces, drumstick pieces, eggplant pieces and potato pieces. Now place this bowl in the middle of the cooker. Then add 2 to 3 drops of oil and close the lid of the cooker and stir for 4 to 5 whistles. Now the lentils and vegetables are cooked.

Now take a pan. Heat oil in it. Then when the oil is hot, add mustard seeds and urad dal. Add sweet curry leaves, asafoetida, red chillies and mix everything. Now add the finely chopped onion. Mix everything. Now when the onion turns a little pink, add green chillies, ginger and garlic paste and cook on medium gas. Now add chopped tomatoes, mix and cook till tomatoes become soft.

Now the tomatoes have softened. Now add turmeric powder, Kashmiri red chilly powder and mix well. Then add tamarind to the water soaked in hot water, add jaggery and mix well.

Now add boiled vegetables and let it cook. Then add this sambar masala and mix well. Let it cook for a while. Now when the oil is released, add boiled arhar dal and mix. Add 1 cup of water and mix. Now add salt and mix everything. Now cook the dal till it comes to a boil.

Now our sambar is ready... which has become very tasty, sour and sweet.

Now our very soft Rice Idli and Sambar are ready to serve. Serve this idli with sambar and coconut chutney.
