Wash and clean Mutton pieces, pat dry them on kitchen towel and Marinate Mutton pieces with dry mango powder 🥭, black pepper powder, salt, meat tenderizer and ginger garlic paste 🧄,1 tbsp oil,chilli flakes, mix well, coat all the pieces well, cover and Marinate for 1 hr. Keep aside.

For mint masala: in bowl 🥣, add chopped mint leaves 🌱, chopped coriander leaves 🌿, finely chopped green chillies, fried onions 🧅, Chaat masala and black pepper powder mix well and keep aside. In a small bowl 🥣 mix orange food colour and rose water 🌹 together and keep aside.

Soak basmati rice 🍚 for 20 mins, boil water and add whole spices: add bay leaves 🍂, big cardamoms, small cardamoms, cloves, cinnamon sticks, star anise and cumin seeds for 15-20 mins, add salt 🧂, 1 tbsp white vinegar, add soaked 🍚 rice and cook until 60% done, remove from heat and keep aside.

For stuffed potatoes 🥔: wash & clean potatoes 🥔, pat dry them on kitchen towel, peel and make four slit on potatoes 🥔 and keep aside. In a small bowl 🥣 add gram flour, coriander & cumin powder, salt 🧂, kashmiri red chillies powder 🌶️, Chaat masala, dry mango powder 🥭, ginger garlic paste 🧄, black pepper powder, yogurt and oil mix well, filling in potatoes 🥔 slit and coat all sides as well, heat oil in the pan and shallow frying them until golden brown, remove from heat and keep aside.

Heat sunflower oil 🌻, add cumin seeds till golden, add split black gram lentil, saute for a 1 min,add finely chopped onions 🧅, cook golden, add Marinate Mutton pieces and cook on medium low heat with onions 🧅 for 5 mins, add ginger garlic paste 🧄, green chillies paste and mix well.

Add tomato puree🍅 and mix well, cook till oil comes out from the side, add kashmiri red chillies powder 🌶️, turmeric powder, salt🧂, bihari masala powder and mix well, cook 2 mins, add water 💦 and mix well, cook until Mutton become tender, remove from heat and keep aside.

To assemble briyani : in a pan add ghee/ oil, give one layer of rice and add mint masala mixture, Mutton gravy give another layer of 🍚 rice, add remaining Mutton gravy, on top add fried potatoes 🥔 and mint masala mixture, pour some rose water mixture, cover and cook for 10-15 mins on slow flame. Serve hot with 🥗 salad.
