Heat oil

Add ginger until you can smell the gingery scent in the air.

Add garlic until lightly brown

Add shallots wait until it’s translucent
- 5
Add tomatoes until properly sautéed (if you have time remove the seeds of tomatoes filter on a strainer. I add the juice and throw the seeds)

Add cleaned/washed/soaked green mussels. (Where I live now it’s hard to find fresh seafood so I buy New Zealand green mussels)

Add fish sauce and starr the timer between 10- 12 minutes

Add water and simmer

Add veggies, little salt and pepper to taste and jalapeño
- 10
Serve warm with rice. You can eat by itself or serve with baguette. Very delightful soup.
