Ingredients

15-20minutes
4 servings
  • 1 Tbsp.Coconut oil
  • 1 KgGround chicken
  • 1 Tsp.Salt
  • 6 ClovesGarlic, minced
  • 2 Tbsp.Ginger, grated
  • 2 Tbsp.Chili garlic sauce
  • 3/4 CupBrown sugar
  • 1/2 CupLow sodium soy sauce
  • 1/4 CupSesame oil
  • 1 1/2 CupsChicken, divided
  • 2 Tbsp.Cornstarch
  • 2 Tbsp.Sesame seeds, toasted
  • As required, Green onions, sliced

Steps

15-20minutes
  1. 1

    Heat coconut oil in a cast iron skillet with high sides over medium heat.

  2. 2

    Add the ground chicken, sprinkle the salt over the chicken, and cook, breaking up with a wooden spoon until no longer pink.

  3. 3

    Add the garlic and ginger. Increase the heat to medium high, and cook until fragrant.

  4. 4

    Add in the chili garlic sauce and brown sugar and cook for 30 seconds.

  5. 5

    Whisk together the soy sauce, sesame oil, and 1 1/4 cups chicken stock and pour over the chicken. Bring to a simmer.

  6. 6

    Whisk together the remaining 1/4 cup of chicken stock and the cornstarch until smooth. Pour into the simmering chicken, stirring vigorously until combined.

  7. 7

    Return to a simmer over medium low heat, and let bubble and thicken.

  8. 8

    Add remaining chicken stock, a tablespoon at a time if it becomes too thick.

  9. 9

    If the liquid is too much, then sprinkle a tablespoon of cornstarch and mix well. Cover and cook till desired consistency.

    Remove from the heat and stir in the sesame seeds and green onions.

    Serve hot with rice or pasta,
