This is a traditional dish that everyone knows. It's easy to cook, popular, and goes great with rice!

Clean the chicken with salt. Cut it into bite-sized pieces, then marinate with 2 onions, 1 piece of ginger about the size of two fingers, crushed and minced; 1/4 tablespoon rock sugar, 3 tablespoons fish sauce, and 1/2 teaspoon turmeric powder for 15-20 minutes.

Place on the stove over medium heat, stir until the chicken is slightly cooked, then cover with a lid and reduce the heat. Let it cook for about 15 minutes. At this point, the chicken will release its juices and cook in its own steam. Adjust the seasoning to your family's taste during this stage. Then uncover and continue to braise until the liquid reduces, then turn off the heat and transfer to a bowl. You can sprinkle with finely chopped lime leaves if desired.
