Ingredients

10 minutes
Serves 3-4 servings
  • 10.5 ozrice noodles (about 300 grams)
  • 5dried chilies
  • 5fresh chilies
  • 10small cloves Thai garlic
  • 8cherry tomatoes or plum tomatoes
  • 2 tablespoonsfish sauce (30 ml)
  • 3 tablespoonsfermented fish sauce (pla ra) (45 ml)
  • 1/2 tablespooncoconut sugar (about 7 grams)
  • 1 tablespoonlime juice (15 ml)
  • 2 tablespoonstamarind juice (30 ml)
  • 1 pinchMSG (optional)
  • 9small fresh shrimp, peeled and deveined
  • 1.75 ozVietnamese pork sausage, sliced as desired (about 50 grams)
  • 1wild olive (makok) (optional)
  • 1-2Thai eggplants, sliced

Steps

  1. 1

    Peel and devein the shrimp, then rinse well. Soak briefly in soda water mixed with a splash of liquor (optional).

    Pound the chilies and garlic together in a mortar and pestle until roughly crushed. Add the coconut sugar and pound until dissolved. Add the remaining seasonings (except the noodles, shrimp, and pork sausage) and gently pound to combine. Add the rice noodles and toss gently to mix. Taste and adjust seasoning for a spicy, tangy, and savory flavor. Finally, add the pork sausage and shrimp, toss to combine, and transfer to a plate. Serve with your favorite fresh vegetables.

    Add the shrimp and pork sausage at the very end.

    Transfer to a serving tray and it's ready to serve.

    Add fresh garlic chives for extra flavor.
