This dish uses the same ingredients as classic papaya salad, but swaps out the shredded papaya for rice noodles. It's packed with bold, spicy flavors!

This dish uses the same ingredients as classic papaya salad, but swaps out the shredded papaya for rice noodles. It's packed with bold, spicy flavors!

Peel and devein the shrimp, then rinse well. Soak briefly in soda water mixed with a splash of liquor (optional).

Pound the chilies and garlic together in a mortar and pestle until roughly crushed. Add the coconut sugar and pound until dissolved. Add the remaining seasonings (except the noodles, shrimp, and pork sausage) and gently pound to combine. Add the rice noodles and toss gently to mix. Taste and adjust seasoning for a spicy, tangy, and savory flavor. Finally, add the pork sausage and shrimp, toss to combine, and transfer to a plate. Serve with your favorite fresh vegetables.
