Ingredients

  • 1 cupwheat flour
  • 1/4 cupjuwar flour
  • 1/4 cupbesan
  • 1/4 cuprice flour
  • 1/2 cupsour dahin/curd or buttermilk/chhash
  • 1 tablespoongreen chilli ginger paste
  • 1 teaspoonsalt
  • Pinchhing
  • 1teasp haldar/turmeric powder
  • 1teasp red chiller powder
  • 2 tablespoonoil for batter and additional oil for cooking
  • 1 teaspoonsugar or jaggery, optional
  • Bunchfresh methi leaves or kasoori methi or spinach/palak or shredded doodhi or shredded cabbage or small cut onions, all optional

Steps

  1. 1

    Mix all the ingredients, add water to make dosa/pancake like batter. Mix well and leave it covered for couple of hours

  2. 2

    Warm griddle/tawa on medium. Add few drops of oil and pour one laddle full batter. Spread it like uttapam or bhakari like thickness.

  3. 3

    Pour oil if edges are sticking, when one side seems cooked, flip it. Cook the other side properly. Flip and check

  4. 4

    Enjoy with jaggery, dahin, pickle or chhundo/murabbo
