I once had 'komochi kombu kushiage' (skewered herring roe on kelp) at an izakaya and it was so good, I wanted to try making it myself. Since komochi kombu is hard to find at regular supermarkets, I bought it online.

Cut the kushiage ingredients into pieces that are easy to skewer, then thread them onto 5-inch (13cm) skewers.

For the pork belly, make three types: plain pork belly, pork belly with cheese, and pork belly wrapped around asparagus.

For seafood, use steamed scallops and whiteleg shrimp.

For kid-friendly options, use quail eggs and processed cheese.

Other kid-friendly options: ham, and chicken breast with cheese sandwiched in between.

Mix the batter ingredients in a tray until the flour lumps are gone. Place the breadcrumbs in another tray.

Dip the skewered ingredients into the batter mixture.

Coat all the skewers with breadcrumbs. Now they're ready to fry!

Since oil might splatter from the mess tin, I cooked and ate them right in the kitchen.

Pour enough vegetable oil (not listed in ingredients) into the mess tin to cover the skewers. Heat over gas until about 350°F (180°C), then fry the skewers.
