In a food processor, pulse the dates until a sticky paste forms.

Add nuts, seeds, coconut, cocoa/cinnamon, maple syrup, vanilla and salt. Pulse until well combined into a chunky mixture that holds together when pressed.

Roll into 1-inch balls and optionally coat in more coconut, cocoa powder, or cinnamon.

Refrigerate for 30 mins to set.
