Ingredients

15 balls
  • 1 cuppitted Mejool dates
  • 1/2 cupraw almonds
  • 1/2 cupraw walnuts or pecans
  • 1 tbspchia seeds or ground flaxseed
  • 1 tbspunsweetened shredded coconut
  • 2 tbspcocoa powder or cinnamon
  • 2 tbspmaple syrup or honey
  • 1 tspvanilla extract
  • Pinchsea salt

  1. 1

    In a food processor, pulse the dates until a sticky paste forms.

  2. 2

    Add nuts, seeds, coconut, cocoa/cinnamon, maple syrup, vanilla and salt. Pulse until well combined into a chunky mixture that holds together when pressed.

  3. 3

    Roll into 1-inch balls and optionally coat in more coconut, cocoa powder, or cinnamon.

  4. 4

    Refrigerate for 30 mins to set.
