Crack the egg into a bowl. Add the bonito soy sauce and water, then whisk well and strain to make a smooth egg mixture. Rinse the shiitake mushroom and score a cross on top. Slice the green onion.

Place the udon noodles in a bowl. Top with the shiitake mushroom, peeled shrimp, carrot slices, ground pork, fish cake, and baby corn. Pour the egg mixture over the noodles and toppings.

Place the bowl in a rice cooker. Add 1 1/2 cups water (about 360 ml) to the outer pot. Cover and start the rice cooker. When it switches off, open the lid, sprinkle with green onion, and serve your delicious steamed egg with udon noodles.
