Sabudana Kheer with Pomegranate, Apple and Nuts

Sabudana or sago kheer with mixed fruits of choice is a tasty and satiating dessert ideal to have on fasting days in Indian culture. The kheer is made by simmering soaked sabudana in water until the balls turn transparent and are cooked through. They are then simmered in boiling milk until thick and creamy.Sugar or jaggery is added to make the kheer sweet.Chopped nuts and raisins are sautéed in ghee and mixed in this kheer to give it a nutty flavor.Saffron adds a golden hue to this kheer.It is cooled and later fruits of choice like pomegranate, apple etc are mixed together and served chilled as a main course during fasting or as an aftermeal dessert.

Ingredients

5-6 servings
  • 1/2 cupsabudana (sago)
  • 1/2 litrefull fat milk
  • 1/4 cupmilk powder
  • 1/2 cupsugar or as needed
  • 1 pinchsaffron(kesar) strands
  • 1/4 tspcardamom powder
  • 1 tspghee
  • 7-8cashewnuts chopped
  • 7-8almonds chopped
  • 1 tbspraisins
  • 1/2 cuppomegranate
  • 1/4 cupapple chopped into small cubes

    Rinse sabudana twice or thrice.Pour 1 cup water and soak for 1 hour.Bring 1 cup water to a boil and add soaked sabudana.Stir often to prevent burning. When the sabudana turns transparent, check if they are cooked through. The pearls should look transparent.

    Add 1 tsp ghee to a pot and stir fry chopped cashewnuts, almonds and raisins.Set aside.Pour 1/2 litre milk and boil.Dilute milk powder in warm milk and mix in the boiling milk.Add sugar or jaggery.If adding jaggery, add at the end when the kheer is done and partially cooled, to prevent milk from curdling. Boil the milk till half reduced. Gradually add the cooked sabudana,pinch of salt, mix well and boil adding saffron strands till kheer is thick.

    Sabudana kheer will thicken further upon cooling. Add cardamom powder and the chopped nuts and raisins.Cool and refrigerate in a serving bowl. Now add few chopped fruits of choice like apple, banana etc and sprinkle pomegranate pearls to make it a healthy and satisfying meal and for the kheer to look attractive.

    Serve Sabudana Kheer or pudding with Fruits and Nuts, chilled and garnish with 1 tbsp more of pomegranate pearls.
