Oyster Omelet
A simple dish to make.
Steps

Rinse the oysters and drain well. Bring a pot of water to a boil, add the oysters, and blanch for 30 seconds. Remove and drain.

Chop the scallions. Crack the 3 eggs into a bowl, add salt and white pepper, and beat well. Add the blanched oysters and mix gently.

Heat a pan over medium heat and add the oil. Pour in the egg and oyster mixture. Cook until both sides are golden brown. Serve hot.
