  1. 100 gmgreen garlic
  2. 1/2 cupgreen peas
  3. 1/2 cupmix green beans
  4. 250 gmbaby potatoes
  5. 250 gmbaby brinjals
  6. 200 gmbroad flat beans
  7. 1/2 cuppeeled papdi
  8. 2raw bananas
  9. 2sweet potato
  10. 200 gmpurple yam
  11. 200 gmelephant foot yam
  12. 2drum sticks
  13. 200 gmbottle gourd
  14. 200 gmcauliflower
  15. 100 gmgreen chilli
  16. 250 gmtomatoes
  17. 2 tbspchilli ginger paste
  18. 10-15fried methi muthiya
  19. 1/2 cupgrated fresh coconut
  20. 1/2 cupfinely chopped coriander
  21. 2 tbsproasted gram flour
  22. 4 tbspcoriander jeera powder
  23. 1 tspturmeric powder
  24. 2 tspgaram masala
  25. 2 tbspkashmiri mirch powder
  26. 2 tbspsugar
  27. 2 tbsplemon juice
  28. 1 tspjeera cloves
  29. 4cloves
  30. 1 stickcinnamon
  31. 1star anise
  32. 2bay leaves
  33. 2dry red chilli
  34. 1/2 tsphing
  35. Salt
  36. 4-6 tbspoil

    Start by peeling potatoes, bananas,both yams. Wash them properly with water. Also remove brinjals' stem. Make big pieces of bananas and yams. Make slit in all big veggies. Peel green peas, flat beans, green gram, green pigeon peas. Peel broad flat beans from both the sides. Chop bottle gourd, cauliflower. Make tomato puree.

    In a bowl take gram flour, coconut,finely chopped or grind green garlic, 3/4 cup coriander, all the spices like chilli powder, turmeric powder, coriander powder, salt sugar, lemon juice and garam masala. Add 1 tbsp oil. Mix it well.Taste and add anything if needed.

    Fill the above masala in big and slitted veggies. Carefully stuff the broad flat beans. Also stuff the green chilies.

    In a pressure cooker take some oil. Add all the beans, chopped veggies. Add some masalas. Also add stuffed veggies. Sprinkle some stuffing masala. Add 1/2 cup water. Close the lid and cook for 2 - 3 whistles.

    Take the remaining oil in a pan, add cloves, cinnamon,star anise,bay leaf, dry red chilli,jeera, hing. Add tomato puree and saute.

    Add all the spices, sugar, lemon juice, some stuffing masala. Add all the veggies, methi muthiya and mix gently. Add water and adjust the consistency. Cook till oil seperates.

    Garnish with coriander and fresh coconut. Enjoy this winter the unique Gujarati Undhiyu.
