Start by peeling potatoes, bananas,both yams. Wash them properly with water. Also remove brinjals' stem. Make big pieces of bananas and yams. Make slit in all big veggies. Peel green peas, flat beans, green gram, green pigeon peas. Peel broad flat beans from both the sides. Chop bottle gourd, cauliflower. Make tomato puree.

In a bowl take gram flour, coconut,finely chopped or grind green garlic, 3/4 cup coriander, all the spices like chilli powder, turmeric powder, coriander powder, salt sugar, lemon juice and garam masala. Add 1 tbsp oil. Mix it well.Taste and add anything if needed.

Fill the above masala in big and slitted veggies. Carefully stuff the broad flat beans. Also stuff the green chilies.

In a pressure cooker take some oil. Add all the beans, chopped veggies. Add some masalas. Also add stuffed veggies. Sprinkle some stuffing masala. Add 1/2 cup water. Close the lid and cook for 2 - 3 whistles.

Take the remaining oil in a pan, add cloves, cinnamon,star anise,bay leaf, dry red chilli,jeera, hing. Add tomato puree and saute.

Add all the spices, sugar, lemon juice, some stuffing masala. Add all the veggies, methi muthiya and mix gently. Add water and adjust the consistency. Cook till oil seperates.

Garnish with coriander and fresh coconut. Enjoy this winter the unique Gujarati Undhiyu.
