Ingredients

  1. 200 grbean sprouts, boiled 1 minute max
  2. 200 grlong bean, cut into 5 cm long
  3. 3medium sized potatoes, peeled and diced
  4. 3carrots, peeled and sliced
  5. 200 grcabbage, roughly chopped
  6. 2 pcstofu, diced and fried
  7. 2eggs, boiled
  8. 🪷 Peanut Sauce 🪷
  9. 200 grpeanut
  10. 3 clovesgarlic
  11. 4red chilli peppers (if you desired)
  12. 2.5 tablespoonspalm sugar (sweet taste)
  13. 1 tbsptamarind water
  14. 1 tspwhite sugar
  15. 7 grsalt
  16. 1/2 tspmushroom powder
  17. 2lime leaves
  18. 450 mlwater

Cooking Instructions

    Prepare all the ingredients

    Deep fried the peanuts. Set aside.

  3. 3

    Blend or grind roasted peanuts, garlic, and chilies until smooth.

    Sauté the blended paste in a little oil until fragrant.

  5. 5

    Add lime leaves, warm water, palm sugar, salt, and tamarind water.

  6. 6

    Stir well.
    Cook until the sauce thickens and becomes aromatic. Adjust seasoning to taste. Add sweet soy sauce if desired for a savory-sweet note

    Boil all vegetables briefly—do not overcook.

  8. 8

    Arrange all vegetables, eggs, and tofu, on a serving plate.
    Generously pour warm peanut sauce over the top.
    Sprinkle with fried shallots and serve with crackers if you desire.
