Ingredients

4 servings
  • 400 mlwater
  • 100 mlSoy sauce
  • 100 mlMIRIN
  • 1 or 2Dried Shiitake
  • 10 cmKonbu for Dashi stock
  • HandfulKatsuobushi Bonito Flakes

Steps

  1. 1

    Put all ingredients except Katsuobushi in a pot.

    Boil it and Turn off the heat, then add Katsuobushi.

  3. 3

    Let it set until Katsuobushi sink.

  4. 4

    Strain the stock through a strainer with a paper towel.

  5. 5

    You can use just Konbu instead of Shitake and Katsuobushi. You will feel Umami!
