Dover Sole in the oven with hot and crispy onion and potato on the side

Ingredients

  1. 2dover soles
  2. 1large red onion
  3. 1large potato
  4. 3 clovesgarlic
  5. 1 bunchparsley
  6. 3red chillies
  7. Olive oil
  8. Salt and pepper

Cooking Instructions

    Pre-heat the oven to 200º. Wash and peel the onion, potato and garlic cloves and cut into thin slices

    Wash and chop the parsley and chillies

  3. 3

    Lightly grease the roasting dish with olive oil and scatter some salt. Then put the potato slices, onion, garlic, parsley and red chillies. Add salt and pepper and a drizzle of oil and put in the oven for 20 mins

    After 20 mins the onion will be soft and potatoes will start getting crispy like this

    Place the fish on top of the potatoes, drizzle with a little more oil, salt and pepper and the juice of one lemon (I also added a little coriander) and put in the oven again. Turn down to 175º and leave for another 15 minutes or so, depending on the size of the dover soles

    Take out of the oven and serve with the crispy onion and potato on the side

    Like this!! Balance the heat of the red-chillied potato and onion side with a cool glass of crisp white wine 😊
