Ingredients

  1. 1 lbTo 1-1/2 lb chicken breast, cut into bite size pieces
  2. 2 cloveGarlic minced/chopped
  3. 1Chopped onion or 1/3 or so bag frozen chopped onion
  4. 1 canChicken broth
  5. 1 canCreamed corn
  6. 2 canSweet corn
  7. 2 canWhole white potatoes, cubed
  8. 2 tspBlack pepper
  9. 2 tspSeasoning salt
  10. 1/2 tspChili powder
  11. 1 cupHeavy cream
  12. 3/4 cupMashed potato flakes
  13. 1/4 cupCooked bacon pieces (NOT "bacon bits")

Steps

  1. 1

    Place a large pot on stove and turn burner on (high or medium-high). Allow to heat for about 2 minutes.

  2. 2

    Spray bottom of pot with cooking spray. Add onion and garlic and sautée for 1-2 minutes. Add chicken and cook through.

  3. 3

    Add chicken broth, corn, creamed corn, potatoes, and seasonings to pot. Simmer for about 10 minutes.

  4. 4

    Add bacon, instant potatoes, and cream. Mix well and heat for 5 minutes.
