Ingredients

  1. 1 lbchicken breasts
  2. 1lg onion, coarsely chopped
  3. 1 Tbspgarlic
  4. 1 1/2 tspdried Italian seasoning or oregano
  5. 14 ozchicken broth
  6. 1/3 cuptomato paste
  7. 1/2 lbportabella mushrooms
  8. 2 canswhole stewed tomatoes
  9. 2red bell peppers, chopped
  10. 2lg celery ribs, sliced
  11. 1/2 cupgreen olives, sliced

Cooking Instructions

    Season the chicken with salt and pepper

  2. 2

    Heat 2 Tbsp of olive oil over med-high, and brown the chicken before you put it in the crock pot

  3. 3

    Sauté the onion in the drippings until softened

  4. 4

    Add ½ cup flour and the garlic and seasoning; cook 1 minute

  5. 5

    Stir in broth, paste and ½ tsp salt

  6. 6

    Bring to a simmer, stirring

  7. 7

    Pour into slow cooker and add remaining ingredients. Cook for 6 hours on low.
