Ingredients

  1. 1/2 tspCayenne pepper
  2. 1 tbspOlive oil
  3. 2 cloveGarlic
  4. 2 eachJalapeño diced and seeded
  5. 1/2 lbDiced lean ham
  6. 1 lbShrimp - medium, peeled
  7. 1 cupUncooked long grain rice
  8. 2 cupPlum tomatoes - diced
  9. 2 cupChicken broth
  10. 1 each10oz package frozen peas

  1. 1

    Warm oil over medium heat.

  2. 2

    Add garlic and jalapeños. Sauté for 2 min.

  3. 3

    Add ham and shrimp. Sauté for 4 minutes until ham is brown and shrimp are white.

  4. 4

    Add rice, chicken broth, tomatoes and cayenne pepper. Bring to boil.

  5. 5

    Reduce heat, cover and simmer for 18 minutes or until rice is cooked.

  6. 6

    Stir in peas. Cook 2 more minutes.
