Ingredients

  1. 500 gramskataifi (shredded phyllo dough) (about 1.1 lbs)
  2. 500 gramsunsalted mozzarella cheese (about 1.1 lbs)
  3. 200 gramsbutter (about 14 tablespoons)
  4. Syrup ingredients
  5. 2 cupssugar (about 400 grams)
  6. 2 cupswater (about 480 ml)
  7. 1 tablespoonlemon juice
  8. 1/2 tablespoonorange blossom water
  9. 1/2 tablespoonrose water

Steps

    Combine the sugar and water in a saucepan over heat and stir until the sugar dissolves.

  2. 2

    When it starts to boil, add the lemon juice and let the syrup boil for 10 minutes, then remove from heat.

  3. 3

    Add the orange blossom water and rose water, then set aside to cool.

  4. 4

    Chop the kataifi dough into small pieces with a knife, then rub it with your hands to separate the strands.

  5. 5

    Melt the butter without letting it get hot, then pour it over the kataifi and mix well.

  6. 6

    Divide the kataifi in half. Spread the first half evenly in a buttered baking pan and press it down firmly with the bottom of a cup.

  7. 7

    Slice the mozzarella cheese and arrange it evenly over the kataifi, then press it down gently with your hand.

  8. 8

    Spread the remaining kataifi evenly over the cheese, then press it down again with the bottom of a cup.

  9. 9

    Bake in a preheated oven at 400°F (200°C) for 30–40 minutes.

  10. 10

    Remove from the oven and immediately pour the cooled syrup over the knafeh. Serve hot.
