I used left over veggies in my fridge and I had a bag of baby dutch potatoes. However, the potatoes could be substituted for cauliflower and you have an even lower carb and Paleo-friendly meal.

Ingredients

  1. 1 lbground turkey or beef
  2. 1organic green beans
  3. 1/2 cupdiced green peppers
  4. 1 cuporganic diced tomatoes
  5. 3/4 cupsliced black olives
  6. 495 gramsbaby yellow potatoes
  7. 1/2 cupdiced mushrooms
  8. 6 tbsptomato paste
  9. 2 tbspreduced fat cream cheese
  10. 1 cuplow fat mozzarella cheese
  11. 1salt and pepper
  12. 1rosemary
  13. 1italian seasoning
  14. 1oregano
  15. 1basil
  16. 1 tbspolive oil

Cooking Instructions

    Preheat oven to 325

  2. 2

    Cook ground turkey in olive oil.

  3. 3

    In a small pot heat green beans and baby potatoes or cauliflower to soften. (Organic green beans can be stiff)

    When ground turkey is done add diced tomatoes and tomato paste mixing with turkey.

  5. 5

    Add green peppers, olives, mushrooms, seasonings except salt and pepper.

    Add cream cheese and 1/2 cup of mozzarella cheese to the ground turkey mixture.

    Drain green beans and cut potatoes/cauliflower into smaller chunks. Place in oiled baking dish.

    Sprinkle with salt and pepper. Add turkey/veggie mixture on top of green beans.

  9. 9

    Add remaining 1/2 cup of mozzarella cheese. Bake for 30 minutes.
