I wanted a chicken chili bit could not find a recipe that sounded good to me so I threw this together. I really liked it so I thought I would share.

Ingredients

2 servings
  1. Around 2 Lbs chicken breast
  2. 1large brown onion
  3. 6large cloves of garlic
  4. 1 Tbspolive oil
  5. 1-15.8 Ozcan great northern beans drained and rinsed
  6. 2-4 Ozcans of chopped green chilis
  7. 1 tspchili powder
  8. 1.5 tspcumin
  9. 1.25 tspsalt
  10. 1 tspdried oregano
  11. 1/2 tspblack pepper
  12. 1/4 tspred pepper flakes
  13. 1/4 tspdried ancho chili pepper
  14. 1/4 tsponion powder
  15. 2 Tbspdried chives
  16. 1/2 tspparmesan cheese
  17. 1 tsptobasco plus more to serve
  18. 4 Ozchicken stock
  19. 4-5 Ozsour cream
  20. 1/4 CHeavy cream
  21. Steamed kale to serve

Cooking Instructions

  1. 1

    Dice the onion and garlic and add to a large pot. Add the oil to the pot. Dice the chicken in 1/2 inch pieces and add to the pot.

    Cook on medium to high heat, mixing frequently, until the chicken is no longer pink.

    Add the beans and everything else except for the sour cream and the heavy cream. Lower the heat to medium low and simmer for 20 minutes. My wife doesn't like kale or I would chop it in fine pieces and add it here. I just steamed it separately and added it to mine when I served it.

    Add the sour cream and the heavy cream. Heat but don't boil. Serve.

    I like a lot of extra tobasco in mine. Add it to taste

I am a 42 year old diabetic that was told by the doctors that I needed to go on insulin. I refused and have been keeping my blood glucose under control with diet. I will try to keep adding recipes but I don't measure and constantly experiment to find good flavor with no grains and sugar, so it may take me a while before I write a recipe with measurements and pictures.
