Ingredients

  1. 3 tablespoonsoil
  2. 2 stalklemon grass, bruised
  3. 4kaffir lime leaves
  4. 600 gramsBrisket, cut into 2 cm cubes
  5. 2litter water
  6. Spices (Ground)
  7. 2red chilies
  8. 3candlenuts, roasted
  9. 2 teaspooncoriander, roasted
  10. 1 teaspoonturmeric
  11. 1 tablespoonschopped galangel
  12. 1/2 teaspoonsdried shrimps paste
  13. 5 clovesgarlic
  14. 7shallots
  15. 3-4black nuts, blanch the flesh, soak until tender and drain
  16. 1 teaspoontamarind

Cooking Instructions

  1. 1

    Heat oil and fry ground spices, lemon grass and kaffir-lime leaves until fragrant, tan add Brisket.
    Sauté until the colour change, then add water.
    Simmer over low heat until the brisket is tender and ground spices are absorbed.
    Serve immediately.
