Ingredients

45 minutes
6-8 servings
  1. 1-2 tbspolive or coconut oil
  2. 1onion, chopped
  3. 2carrots, peeled and chopped
  4. 1/2green or red pepper, chopped
  5. 2 tbspchopped garlic
  6. 1 1/2 c.Lentils
  7. 28 ozcan crushed tomatoes
  8. 4 c.Water
  9. 2 tbsptomato paste
  10. 2 tspagave syrup
  11. 1 tbsptamari
  12. 2 tbspchili powder
  13. 2 tspcumin
  14. 1 tspsalt
  15. 1/4 tspblack pepper

Cooking Instructions

45 minutes
  1. 1

    In an instant pot on saute setting, saute onions and carrots in olive or coconut oil until onions are soft and translucent.

  2. 2

    Add green or red pepper and garlic and saute 2-3 minutes.

  3. 3

    Add the remainder of the ingredients and stir. Cook on high pressure on bean or stew setting for 20 minutes with pressure valve closed.

  4. 4

    Release steam. Serve topped with shredded vegan, nutritional yeast or conventional cheddar cheese. May serve over brown rice.

    For stove top preparation, saute onions and carrots in oil. Add green pepper and garlic. Saute 2-3 minutes. Add rest of ingredients and simmer 40 minutes.

This looks SO Yummy! 😍😋🤩 I have started using lentils more as well and am leaning vegan... 😏👌 I used them as taco meat but didn't even think of chili! 🤦🏻‍♀️ Of course! 👏😄👍👍
