Ingredients

5-7 servings
  1. 1large onion
  2. 1 tablespoonbutter
  3. 7 clovesgarlic
  4. 1 cancannellini beans
  5. 1 cantomatoes
  6. 1 cancorn
  7. 1 canbutton mushroom
  8. 1large carrot
  9. 1red capsicum
  10. 8small potatoes
  11. 5 cupwater
  12. 3 tablespoonhoisin sauce
  13. 2 tablespooncayenne powder
  14. 2 tablespoongarlic powder
  15. 3 tablespoonmorrocan seasoning
  16. 4bird eye's chilli
  17. Cauliflower florets (optional)
  18. 2 tablespoonpotato starch
  19. 3 tablespoonwater
  20. 4eggplants

Cooking Instructions

  1. 1

    Slice eggplants in half and bake in the oven for 10 minutes or until the skin turns brown. Let it cool and then chop.

    Sauté onion and butter until it turns translucent. Then mix in garlic and stir until brown but not burn.

  3. 3

    Pour in the rest of the ingredients except baked eggplants and cover them in water. Press stew setting.

    Let it sit for about 20 minutes and after it is done, pour in potato starch slurry.

  5. 5

    Mix eggplants and serve.
