Yam is in season and I felt a need to do a long time dish...
Steps

Peel yam and chop into cubes and set aside. Slice your onions, blend your pepper & garlic.

Set your pot on fire, add red oil, allow to heat for a few secs then add chopped onions, blended pepper and garlic allow to fry.

Add water then add curry, thyme, salt and Maggi to taste, pour in your chopped yam and dry fish. Cover your pot and allow to cook.

Check to ensure your yam is cooked then add bitter leaf (you can use ogu or spinach) I prefer bitter leaf. Allow to sit for 2mins and you're good to go! Serve and enjoy with a liquid of choice (I do fresh citrus blast)
