Ingredients

  1. 1/2 tspLemon juice
  2. 2 cupsRefined flour
  3. 1/4 cupGhee or oil
  4. 1 pinchsalt
  5. 1 cupSugar
  6. 1/3 cupWater
  7. as neededGhee or oil for deep frying
  8. as neededChopped pistachio for garnishing

Cooking Instructions

    Assemble refined flour ghee and salt in a bowl. Mix very well by pressing with hands for 2-3 minutes.

    Add little amounts of water at a time and knead to make a smooth but stiff dough. Now spread few drops of ghee to avoid dryin from outside.

    Cover and keep it aside to rest for 20 minutes.

    Meanwhile heat a pan. Add sugar and water together. Keep the flame over low to medium and stir until the sugar dissolves.

    Now add saffron strands and cardamom powder.

    Stir and cook until get a one thread consistency.

    Add lime juice to avoid crystallization of sugar and turn off the flame.

    Take the dough divide into 4 big balls.

    Using a rolling pin roll out each ball of dough into a flat disc of about 1.

    Take a cookie cutter and cut the heart shaped shakkarpara. Repeat with the rest of the dough.

    Heat oil in a kadhai. When oil is hot enough to add some shakkarpara to the oil.

    Deep fry the shakkarpara in medium hot oil on medium flame til they turn light brown and crispy.

    Take out the shakkarpara when done and keep it aside to cool down a bit for 2-3 minutes.

    Deep the shakkarpara in the warm sugar syrup for 1-2 minutes. Coat them well from all the sides.

    Take the shakkarpara out from the syrup and place it in a plate and allow it to cool down completely.

    Garnish it with pistachios.

    It can be stored upto one month.
