A healthy and cooling drink. Did you know that curry leaves that we find in abundance in Kenya is healthy for you? It helps to maintain a healthy digestive system and helps to fight bad bacteria.

Ingredients

serves 4 servings
  1. 1medium beetroot
  2. 1 tspghee or oil
  3. 1 tspcumin seeds
  4. 2 sprigscurry leaves
  5. 2 cupsthick plain yogurt
  6. 1-1 1/2 cupscold water
  7. 1/2 tspsalt

Cooking Instructions

    Wash and peel the beetroot. Cut it into quarters.

  2. 2

    Heat oil in a pan over medium heat.

  3. 3

    Add cumin seeds, curry leaves and the chopped beetroot.

  4. 4

    Add salt, mix well. Cover the pan and let the beetroot cook on low heat till its done. Make sure you stir it frequently so that it does not stick to the pan.

    Put the cooked beetroot along with the curry leaves, yogurt, salt and water in a blender.

  6. 6

    Process the mixture till you get a smooth liquid.

  7. 7

    Serve immediately. Can add ice cubes and sprinkle some roasted cumin powder.

    Tip: Can add about 1 tsp grated ginger. Make it sweet by adding sugar instead of salt. The thickness of the drink depends on how you like it, with more yogurt or more water.
