Put the sugar and water in a small saucepan over a medium heat, stirring just enough to dissolve the sugar. Set aside to cool

Put the pineapple chunks in a blender with just enough cold water - still or sparkling - to barely cover, around 360ml / 1 & 1/2 cups approx but let your eye be your guide

Puree smooth then strain the mixture

Add more still or sparkling water in to make the amount of liquid in the blender up to 1140ml / 5 scant cups

Add some of the sugar syrup and lime juice to taste. The leftover sugar syrup can be frozen for later use or kept in the fridge for a week

Chill before serving
