Gujarati cusine popular savoury snack. Made from all green leaves.. spinach leaves,radish leaves,spring onions leaves, fenugreek leaves with besan, dholka flour,jowar & bajra flour,boiled rice and spices..to make more nutritious , healthy snack.
Steps

Chopped all green leafy vegetables. Wash in water and keep aside. In mixing bowl add all flours.

Add chopped green leafy vegetables, boiled rice, green chillies-ginger paste,salt, sugar, oil, soda bi carb, turmeric powder, asafoetida, sesame seeds.mix all.

Add curd and bind to thick mixture.

Roll out muthiyas from prepared mixture. Steam for 30 mins.

Cool and cut into 1/2" pieces.

Add & heat oil in kadhai,do tempering of mustard cummin and sesame seeds as they splutter. Add chopped steamed muthiyas pieces,mix and cook for 2 minutes. Garnish with finely chopped fresh coriander leaves.

Serve/ Relish Hot Greens Muthiyas.
