Sweet Potato Ganuchi with Quinua and Egg Mix

Take sweet potato make some cuts and bake this in preheated oven 180* for 35 to 40 minutes, when done and cool peel it

Now mash sweet potato with masher and pass it with strainer to avoid lumps

Now add wheat flour, ragi flour and egg in this and make smooth dough
- 4
Make small rolls of dough and cut rolls in small small cubes, roll the fork with dry flour and roll every cubes over the fork to make shape and pattern

Now boil water add salt and few drops oil in this water and add shaped dough in this and cook till it's floating on surface, when done left out and keep aside

Add egg and milk in a bowl, mix it and keep aside this

Heat some olive oil in a pan, add chopped garlic and stir, now add chopped onion and stir

Add chopped green and red chillies, and add chopped deseeds tomato and capsicum in this

Add pasta sauce and cooked quinua in this and stir

Add black pepper powder,salt and mixed herbs in this and stir for minute

Now add egg and milk mixture and chopped olives in this and mix till egg and milk mixture start to thick

When done, switch of gas and serve hot and pour some extra virgin olive oil over the top
