Ingredients

4 serving
  1. 1 cup=250 ml
  2. 1 tbspCooking oil + ghee
  3. 1 tspmustard seeds
  4. 1 tspurad dal
  5. 1 tspchana dal
  6. 1/2 tspcumin seeds
  7. 1/4 tspHing
  8. 6-7curry leaves
  9. 1-2green chillies; finely chopped
  10. 1 inchginger; grated
  11. As requiredVeggies (any type), optional
  12. 1/4 tspturmeric powder
  13. 1 cuprava/sooji/semolina, coarse
  14. 1 cupfresh curd/dahi/yogurt, whisk
  15. 2 tbspcoriander, finely chopoed
  16. 1/2 tspsalt
  17. 1/2 cupwater
  18. 1 tspeno or 1/2 tsp baking soda
  19. 1/2 slicelemon juice
  20. 10cashews, halves

Cooking Instructions

    Firstly in a kadhai heat 1 tbsp oil and splutter 1 tsp mustard seeds,1tsp chana dal,1/2 tsp jeera, a pinch of Hing and few curry leaves

    Now add 1 chilli,1 inch ginger and saute for a minute.

    Further add 2 tbsp capsicum,1/4 tsp turmeric and saute for 2 minute.You can use any type of veggies like carrot; green peas

    Keeping the flame on low add 1 cup rava and roast well.

    Roast for 5 minute or until the rava turns aromat.

    Cool the rava completely and transfer to a bowl.

    Furthermore add 1 cup curd,2 tbsp coriander and 1/2 tsp salt.

    Mix well forming a thick batter.

    Now add 1/2 cup water and mix well forming a smooth batter.Add lemon juice also

    Rest for 15 mins or until the rava absorbs water.

    Mix well and add water as required to form an idli batter consistency batter.

    Grease the idli plate with oil and place cashews in the centre.

    Just before steaming add 1 tsp eno and mix well till it turns frothy.

    Pour the batter immediately into the idli plate. Do not rest the batter.

    Steam the rava idli 15-20 mins on medium flame.

    Finally serve instant rava idli with coconut or green chutney or tomato sauce and sambhar.
