Fried rice with rice is common, but fried rice from cauliflower is very unusual. Besides being healthy it is also low in carbs, I think 🤔
And i serve this cauliflower fried rice with pork chop and I think it's good combination too😍

Ingredients

  1. 1large head of cauliflower
  2. 2 tablespoonoil
  3. 1 tablespoonbutter
  4. 3large eggs, beaten
  5. 2 clovegarlic, minced
  6. 2carrot, diced
  7. 1/2cip feozen peas, defrosted
  8. 2 tablespoonsoy sauce
  9. 1 teaspoonsesame oil
  10. 2spring onions thinly sliced

Cooking Instructions

    Remove the core and let the cauliflower dry completely.
    Coarsely chop into florets, then place half of the cauliflower in a food processor and pulse until the cauliflower is small and has the texture of rice or couscous (don't over process or it will get mushy). Set aside and repeat with the remaining cauliflower.

    In a small bowl and beat the eggs with a fork. Season with salt. Heat a wok medium heat, add oil and poring eggs and cook, turning a few times until set like scramble eggs, set aside.

    Heat a wok over medium-high heat. Once hot, add butter and oil and the minced garlic and stir-fry for 30 seconds, until fragrant but not browned.
    Add the carrots and cook for 2 minutes, until tender. 
    Add the peas and cook for 1 minute.
    Add the cauliflower, and stir to combine.

    Spread the cauliflower mixture out evenly in the wok so that it has more area to fry, allow to cook without stirring for about 2 minutes.
    Mix the rice and stir-fry until the cauliflower rice is tender.
    Add the scramble eggs into the rice and mix well until combine.
    Add soy sauce and sesame oil, and the spring onions stirring again until combine well.

    Taste the rice and add more soy sauce, salt, and pepper as needed.
    Serve with any dish you like.
