I too much love Irish potato but I was tired of taking chips it takes me long before this idea just came to my mind. The taste is amazing try it & give me a cooksnap.

Ingredients

5 servings
  1. 11/2 cupflour
  2. 1/2 cupwheat flour
  3. 1tspn of yeast
  4. 1/4tspn of salt
  5. 1 tbspnvegetable oil
  6. Pinchbaking powder
  7. 1large egg
  8. 1/2 tbspnsugar
  9. Potato fillings
  10. 7medium sized Irish potatoes
  11. 2large scotch bonnet& 1 small sized onion
  12. 1/2tspn of salt
  13. 2seasoning cubes, spices & curry
  14. 1green pepper & 1 large carrot
  15. Vegetable oil

Cooking Instructions

    In a clean bowl, add the flour, sugar, yeast,baking powder & salt, mix & add the oil, mix, crack the egg, beat & add it up, add warm water to make a watery dough, then add up the wheat flour to make a soft stick dough, knead the dough for about 10mins.

    Cover the dough with nylon & keep in a warm place for 15mins until it rises.

    Peel & wash the potatoes, dice it using knife & add water and salt to boil for 7mins.

    When the water drains & remains little add the diced carrot(cut the carrot horizontally into four equal halves & then cut vertically) and allow it for 1 more minute, drain.

    Set the pan on flame, add 2tbson of oil, spices & seasoning cubes, stir, add the chopped green pepper, grated scotch bonnet & onion, keep stirring & add the carrot & potato.

    Stir the mixture & close for 2mins. Wash your hand with soap, flatten the dough in your palms & fold the edges gently until you close it, give the end somewhat a drumstick shape.

    Deep fry in oil at low heat & enjoy.
